 Blueberry Gem Muffins

I ran across this recipe on Cooks.com as I was researching traditional gem pan recipes. This quick and easy  recipe was perfect for my Griswold #1 gem pan.

Ingredients
  • 1 cup self-rising flour
  • 3/4 cup sugar
  • 1 egg, slightly beaten
  • 1/2 teaspoon vanilla
  • 1/4 cup oil
  • 1/4 cup milk
  • 1/2 cup blueberries
Preparation
Preheat oven to 375˚. 

In a large mixing bowl, sift together the flour and sugar and set aside. 

In a small mixing bowl, whisk together the egg, vanilla, oil and milk. 

Make a well in the center of the dry ingredients, and pour in the liquid ingredients. Using a spatula, fold the ingredients together until just mixed. DO NOT over mix. Gently fold the blueberries into the batter. 

Spoon batter into a greased muffin pan or pan lined with paper liner. Bake at 375°F for 25 minutes. 

Makes 12 muffins.
