Brioche French Toast

This recipe has evolved for me over the years. Just as important as using the right ingredients is using the right bread. I’ve found brioche bread works best, although I’ve had good luck with Challah bread and good quality croissants as well.

Ingredients
  • 1 loaf of thick cut brioche or challah bread
  • 4 whole extra large eggs
  • ½ cup of half and half
  • 2 tbsp of brandy
  • 2 tbsp of orange juice
  • 1 tsp on vanilla extract
  • 1 tsp orange zest
  • 1 tbsp of cinnamon 
  • Dash of nutmeg
  • Dash of ground cloves
Preparation
Whisk together the eggs, half and half, brandy, orange juice and vanilla extract into a small mixing bowl. Add in orange zest, cinnamon, nutmeg and ground cloves. Whisk until spices are well mixed into batter. 

Dip bread into batter and then place on a hot, greased griddle. Cook until each side is golden brown.

Serve immediately with maple syrup or keep warm in a 170° oven until ready to serve. I always try to serve them with strawberries and dust them lightly with powdered sugar if I have time.
