Caramelized Plantains

Plantains can be a dessert or a side dish depending on the sugar content. As dessert, the warm, caramelized plantains are a perfect topping on a good vanilla ice cream (similar to baked apple à la mode). As a side dish, a less sweet version of plantains are the perfect complement to the spicy jerk seasoning in many Caribbean recipes, including jerk chicken. 

When pan-frying plantains, you’ll want to use ripe, yellow ones. It’s OK to use ones with dark spots on their skins. The more ripe the plantain, the sweeter the dish. If all you find is green plantains, go ahead and buy them. They should be ready to cook in 3-4 days.

Ingredients
  • 1 tablespoon unsalted butter
  • 1 tablespoon sugar
  • 2 plantains (sweet), peeled and cut into ⅓-inch slices lengthwise
  • ⅓ cup apple juice
  • 1 ½ teaspoons ground cinnamon
Preparation

Desert
In a 9-inch (#6) skillet, melt the butter over medium heat. Add the sugar and cook, stirring, until the syrup is lightly browned, about 2 minutes.

Add the plantains, tossing to coat, and cook until tender, about 3 minutes. Add the apple juice and boil for one minute, or until thickened slightly. Stir in the cinnamon and remove from the heat.
Serve plantains over vanilla ice cream among 4 dessert plates and spoon the juices over each.

Side Dish
Follow the steps for the dessert, but omit the sugar.
