Martha’s Pork Chops with Apples and Onions

There’s something about apples with pork chops. They are the perfect combination. Martha Stewart's quick and easy recipe is simply the best. I didn’t used to be a big Martha Stewart fan, but after seeing her with Snoop Dogg on “Martha & Snoop's Potluck Dinner Party.” I’ve taken a second look. I’m glad I did because some of her recipes, like this one, are really good.

Ingredients
  • 6 bone-in pork chops, cut ¾ inch thick
  • Coarse salt and freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 large white onion, sliced
  • 2-3 apples, cored and sliced (about 3 cups)
  • 1 cup chicken broth
Preparation
Lay out pork shops for 30 minutes so they warm up to room temperature. Pat dry the pork chops with a paper towel. Season generously with salt and pepper on both sides. Heat a large cast iron skillet over high heat, and add the olive oil. Lay in the pork chops and don't move them for a few minutes, to ensure a golden sear. Turn and brown well on the other side for a total of about 10 minutes. Transfer the chops to a warm plate. Cover plate with foil to keep the chops warm.

Melt the butter into the original pan. Add the onion and apples. Sauté for about 8 minutes, until the onion slices are lightly caramelized and the apples have begun to soften. Add the chicken broth. Once the chicken broth begins to boil, return chops to the pan along with any juices that may have accumulated on the plate.

Cook about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple-onion mixture. 

Serve the chops over rice or mashed potatoes with a large spoonful of the apples and onions over the top.
