S'mores Cast Iron Pie

I grew up spending my summers on the beach in Capitola, California. One summer I slept on the beach for 66 days in a row. Campfires on the beach were a nightly occurrence, and s'mores were a staple while hanging out by the fire. Regrettably, I don't sleep on the beach much anymore, but I can still bust out my cast iron skillet and make s'mores in my kitchen. This is an easy recipe as long as you keep an eye on the marshmallows and don't let them burn!

Ingredients
  • 2½ cups graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 6 tablespoons butter, melted
  • 1 pound semisweet chocolate, finely chopped 
  • 1 ½ cups heavy cream 
  • 2 cups large marshmallows
Preparation
Preheat oven to 350°.

Make the graham cracker crumbs by pulsing them in a food processor.

Place the crumbs and sugar into a bowl. Add the melted butter and combine it well with a spatula.

Using your hands, place the crust mixture into a large cast iron skillet. Distribute the crust evenly over the bottom and up the sides, but do not spread on top of the rim. Try to make the thickness of the crust even on the sides and the bottom. Press in firmly!

Bake the crust for 5-10 minutes until the edges start to brown. Remove from the oven and set aside to cool.
Place the chopped chocolate in a medium bowl.

In a small saucepan, bring the cream to a simmer and then pour it over the chocolate. Let it sit for 2 minutes, then stir the cream and chocolate together until smooth. Pour the chocolate into the crust and spread evenly. Let cool for at least 5 minutes.

Preheat the broiler. Position an oven rack about 4 inches from the heating element.

Arrange the marshmallows on top of the chocolate. Broil the pie until the marshmallows are golden brown, 2 to 3 minutes, rotating occasionally in order for everything to brown evenly. 

Serve immediately.
